Changing channels is a method used in order to increase item drops that are often rare, and only found in certain NPC's that are often 1 in number and found only in a certain area, so by switching channels the player is able to kill the NPC more than once than what would be allowed on a single channel.
This is commonly done with Full Moon Swords A.K.A "FMS".
