Must be killed so that the Smith comes at Demon Tower, and can be specialised by weapons, armours, accesory. If he is defeated, all the horses disappear and all monsters die on the floor. If he is killed before all the monsters are killed, you can not usually to upgrade at Demon Tower Blacksmith, but it can happen in rare cases it can still be upgraded something.
